Tofu is made from soybeans - it's like cheese made from plants!
It's bland by itself but absorbs flavors beautifully!
Tofu has water in it. If you don't press it, it'll be soggy!
How to press: Wrap tofu in paper towels, put something heavy on top, wait 20-30 minutes.
Or: Buy super-firm tofu that doesn't need pressing!
Cubes: Great for stir-fries, salads
Slices: Good for sandwiches, grilling
Crumbled: Great for pasta sauce, tacos
Strips: Good for baking, marinating
Asian: Soy sauce + sesame oil + ginger + garlic
BBQ: BBQ sauce + smoked paprika
Italian: Olive oil + Italian seasoning + garlic
Spicy: Sriracha + soy sauce + lime
